TY - JOUR AU - Limsiriwong, Saowaluk PY - 2018/03/20 TI - แนวทางการพัฒนาการผลิตกล้วยตากอย่างยั่งยืน พื้นที่อำเภอบางกระทุ่ม จังหวัดพิษณุโลก JF - Journal of Community Development Research (Humanities and Social Sciences); Vol 11 No 1 (2561): January-March 2018 KW - Human Social N2 -      การวิจัยครั้งนี้มีวัตถุประสงค์ เพื่อศึกษาปัญหาในการผลิตกล้วยตากบางกระทุ่มและแนวทางในการพัฒนาการผลิตกล้วยตากบางกระทุ่มให้มีความยั่งยืน เป็นการวิจัยเชิงคุณภาพ โดยมีเกณฑ์การคัดเลือกพื้นที่ตำบลบางกระทุ่ม ซึ่งเป็นพื้นที่ที่มีปริมาณการผลิตจำนวนมากที่สุดของอำเภอบางกระทุ่ม จำนวน 6 แห่ง ซึ่งกลุ่มผู้ให้ข้อมูลหลัก ได้แก่ ผู้ประกอบการ/ผู้นำกลุ่มผลิตกล้วยตาก แรงงานในการผลิตกล้วยตาก และผู้จำหน่ายผลิตภัณฑ์กล้วยตาก ทั้ง 6 แห่ง โดยมีวิธีการเก็บรวบรวมข้อมูล ดังนี้ การวิเคราะห์จากเอกสาร การสัมภาษณ์แบบกึ่งโครงสร้าง และการสังเกตแบบไม่มีส่วนร่วม ซึ่งดำเนินการวิเคราะห์ข้อมูลด้วยการวิเคราะห์เนื้อหา      ผลการวิจัย พบว่า การผลิตกล้วยตากบางกระทุ่มมีปัญหาด้านปัจจัยการผลิต ได้แก่ ขาดแคลนกล้วยน้ำว้า กล้วยน้ำว้าไม่ได้มาตรฐาน ขาดแคลนเงินทุนและความรู้ด้านการตลาด ขาดแคลนแรงงานและแรงงานมีความเสี่ยงในกระบวนการผลิต และการขอรับรองมาตรฐานด้านผลิตภัณฑ์มีค่าใช้จ่ายสูง ส่วนด้านการตลาด มีการตัดราคาขายของผู้ผลิตแต่ละราย กลุ่มคลัสเตอร์กล้วยมุ่งแข่งขันมากกว่าช่วยเหลือ สำหรับแนวทางในการพัฒนาการผลิตกล้วยตากบางกระทุ่มให้มีความยั่งยืน ประกอบด้วย ส่งเสริมกระบวนการผลิตที่ไม่ทำลายสิ่งแวดล้อม ส่งเสริมการปลูกกล้วยออร์แกนิค นำเปลือกกล้วยไปใช้ประโยชน์อย่างคุ้มค่าและลดมลพิษ ส่วนด้านกระบวนการผลิตที่มีประสิทธิภาพ ควรลดต้นทุนและความเสียหายในการขนส่ง จัดทำแผนขอสนับสนุนด้านเงินทุนและการวิจัยร่วมกับหน่วยงานภาครัฐ สถาบันการศึกษา ให้ความรู้ผู้ประกอบการด้านการตลาด อีกทั้ง ผู้ประกอบการต้องวางแผนคนในการผลิต การรักษามาตรฐานและพัฒนาคุณภาพของผลิตภัณฑ์ และการบริหารจัดการน้ำเพื่อให้มีกล้วยน้ำว้าในการผลิตได้อย่างต่อเนื่อง คำสำคัญ : การพัฒนาการผลิต  การผลิตอย่างยั่งยืน  กล้วยตาก      The objectives of this research were: 1) to study the problems of dried banana production in Bangkatum, and 2) to develop guidelines for a sustainable production of dried banana in Bangkratum District. Bangkratum subdistrict was chosen to be the study area due to its largest production area of dried banana. The participants were: 1) dried banana manufacturers/leaders of each dried banana producers group, 2) dried banana workers, and 3) dried banana suppliers in 6 areas. This study applied qualitative research methodology including documentary analysis, semi-structured interviews and non-participant observation. The analysis of data was content analysis.      The results revealed that the problems of production factors of dried banana production were lack of banana supply, unstandardized bananas, lack of funding and marketing knowledge, shortage of labor and the risk of labor in the production process, and costly product certification. In addition, there were cut prices among manufacturers due to competitive factors where they focused on competitive rather than cooperative. The development of guidelines for sustainable production of dried banana includes promotion of environmental friendly manufacturing processes, promoting organic banana planting, bringing banana peels for better utilization in order to reduce pollution. Enhancing the production efficiency process includes reduction of costs, reducing damage in transportation, setting plans for getting funding and research in collaboration with government and educational institutions, educating entrepreneurs for marketing knowledge.
