%A Tuptim, Natthira %A Chanarong, Krisana %A Patharamutha, Meesinee %A Suklek, Pathompong %A Wiriyasumon, Supaluk %D 2017 %T การศึกษาความเชื่อมโยงของวัฒนธรรมการบริโภคในจังหวัดพิษณุโลก กับวัฒนธรรมการบริโภคในกลุ่มประเทศอาเซียน / A Study of Connection of Dining Cultures between Phitsanulok and ASEAN %K Dining Cultures, Connection, Phitsanulok, ASEAN %X      ประเทศไทยได้เข้าสู่ประชาคมอาเซียนในปี พ.ศ.2558 ซึ่งอาจทำให้รูปแบบของสังคมและวัฒนธรรมที่เป็นของไทยเกิดการเปลี่ยนแปลงหรือมีรูปแบบผสมผสานข้ามวัฒนธรรม ซึ่งอาจทำให้วัฒนธรรมไทยถูกกลืนและลืมหายไปในที่สุด การรักษาไว้ซึ่งวัฒนธรรมของตน ไม่ให้ถูกหลอมรวมไปกับวัฒนธรรมอื่นที่จะเข้ามา สิ่งแรก คือ จะต้อง “รู้จักวัฒนธรรมของตน” อย่างถ่องแท้ งานวิจัยนี้มีจุดมุ่งหมายเพื่อศึกษาความเชื่อมโยงระหว่างวัฒนธรรมการบริโภคที่พบในจังหวัดพิษณุโลกกับวัฒนธรรมการบริโภคที่พบในกลุ่มประเทศอาเซียน ประชากร คือ คนในจังหวัดพิษณุโลก ประเทศกัมพูชา ประเทศพม่า ประเทศลาว และประเทศเวียดนาม จำนวน 728 คน แบ่งออกเป็นกลุ่มผู้ให้สัมภาษณ์จำนวน 228 คน และกลุ่มผู้ตอบแบบสอบถาม จำนวน 500 คน เครื่องมือที่ใช้ในการวิจัย คือ แบบสัมภาษณ์แบบมีโครงสร้างกับแบบสอบถาม ผลการวิจัย พบว่า ด้านอาหาร 1. อาหารประจำถิ่นที่รับประทานบ่อยของคนในจังหวัดพิษณุโลก คือ อาหารประเภทแกง (แกงอ่อม แกงป่า แกงไก่ แกงหัวปลี ฯลฯ) 2. อาหารประจำถิ่นที่รับประทานบ่อยของคนในประเทศกัมพูชา คือ ซอมลอมะจู 3. อาหารประจำถิ่นที่รับประทานบ่อยของคนในประเทศพม่า คือ โมฮิงกา 4. อาหารประจำถิ่นที่รับประทานบ่อยของคนในประเทศลาว คือ ลาบ และ 5. อาหารประจำถิ่นที่รับประทานบ่อยของคนในประเทศเวียดนาม คือ เฝอ ประเด็นความเชื่อมโยง พบว่า มีความเชื่อมโยงกันระหว่างอาหารที่รับประทานในงานประเพณีต่างๆ ที่จะต้องรับประทานอาหารที่มีส่วนประกอบของข้าว เช่น ข้าวเหนียวแดงในงานแต่งงานของคนในจังหวัดพิษณุโลก แบ๊งจึง (ข้าวต้มมัดเวียดนาม) ในงานแต่งงานของคนเวียดนาม นอกจากนี้ ยังมีความแตกต่างด้านความเชื่อที่มีต่ออาหาร เช่น คนในจังหวัดพิษณุโลกนิยมรับประทานขนมจีนในงานแต่งงาน เนื่องจากถือลักษณะของเส้นยาวๆ ของขนมจีนว่าจะทำให้รักกันยืนยาว แต่คนพม่าจะไม่รับประทานโมฮิงกาหรือขนมจีนในงานแต่งงาน แต่มักรับประทานในงานศพ เป็นต้น      Thailand has participated AEC (Asean Economics Community) since 2014. This participation may change or have cross-cultural integration to Thai society and culture which will later make them disappeared. Conservation of Thai society and culture is important. The key to successful cultural conservation is to truly know our culture. The current study aimed to study the connection of dining cultures between Phitsanulok and ASEAN. The subject of the study were 728 people in Phitsanulok Thailand, Myanmar, Lao, Cambodia and Vietnam. They were divided to 228 interviewees and 500 questionnaire answers. Research instruments were structured interview and questionnaire. The results revealed that; 1. The local dish of Phitsanulok was the dish of curries (such as GaengOrm (Meat curry soup), GaengPaa (Vegetable curry), Chicken curry, Banana blossom curry), 2. The local dish of Myanmar was Mo HinGa (rice vermicelli served with curry), 3. The local dish of Lao was Laab (Lao style spicy meat/beef salad), 4. The local dish of Cambodia was Samlar Machu (Sour soup), 5. The local dish of Vietnam was Bánh Chưng (Vietnam style glutinous rice steamed in banana leaf). The other results of research were the connection between dishes in traditions that there is rice as the ingredient of the dish such as Red sticky rice in wedding ceremony of Phitsanulok and Bánh Chưng made from rice in wedding ceremony. The belief in food was different in the case of Kha Nom Jeen (rice vermicelli served with curry).
